ingredients: unbleached wheat flour, water, natural starter, salt and yeast.
For those too intimidated by the size and darnkess of the filone, this oval loaf with a chestnut-colored, open crust and irregular crumb structure is more to the measure of man. It does not ferment as long as the filone and therefore has milder sourdough flavor. You won’t have any trouble identifying it, just look for the distinct slit down the middle.
